For the most part, Viterbo isn't a place for kitch dining, but this place is widely known for serving more than 300 different preparations of spaghetti. Each has maybe 3 to 5 ingredients touseled together with the pasta. One dish doesn't photograph differently from the next. But the meal - with marscopone, sweet sausage, and walnuts - was the kind of simple, vibrant and satisfying food I came here imagining.
